I'm not so sure about UW but I know you can "borrow" heros from another person and do FOW with just 7 without too much grief. I think I remember bring 2 monks, empathetic removal para, cruel spear para, mind blast ele with splinter and kaolai, and a few extra damage/defense guys. Overkill on hex removal and party healing is never a bad thing, especially if there's a risk of you getting kicked out.

FoW has apparently been done with player plus three heroes, not sure about UW. I haven't really had a go at FoW, but I tried to crack UW with three heroes, and could do the first 7 quests pretty easily, but I simply couldn't get past the Chaos Planes.
Maybe I should try again now that the Chaos Planes have been changed, might suit my build better now.

No. You can't take henchies into FoW and UW.
However, get to know Unyielding Aura, the current most unbalanced skill in the game for PvE. With Unyielding Aura, you can park one hero in a safe location, and do most or all of UW and FoW with one human and two heroes.
Unyielding Aura has unlimited rez range, and the rezzed ally comes back with full health and energy.
If you can't figure out how to clear with a team of 3, borrow 3 heroes from a buddy (he enters UW or FoW with you, puts his heroes on defend, then maps out. You will be able to flag-control/skill control your 3, and his 3 will follow you.

Well, you could try my build: 1 player and only 2 heroes in Hard Mode

If you want to take heroes then it's best that you be the monk... If you're the ranger you'll need some friends to help. Or you could just make a monk.
But in the end to answer your question-yes it can be done.
